Super Easy Energy

Now that it’s time for spring sports, my son needs a snack for after school when he stays for practice.  He loves my “energy bars.”  They are really easy to make and unlike many “energy” bars on the market today, there are no bad ingredients.

1 cup dates (preferably organic)
¼ cup raw cashews (ideally soaked in water overnight and drained)
¼ cup chia seeds
¼ cup raw pumpkin seeds

Soak the dates in warm water for about 10 minutes to soften.  Cut in pieces (and remove pits).  Add all ingredients to a food processor and blend until mixed.  The ingredients will start to stick together.  Remove ingredients and put them in the middle of a piece of parchment paper.  Fold the bottom of the parchment over the top and squeeze it together and shape into bars.  Place in refrigerator.

 

There are tons of variations to this…

  • instead of dates, use figs (or ½ and ½ – half figs, half dates)
  • squeeze a little bit of lemon in the mix or add some lemon rind
  • add some vanilla
  • add some shredded coconut (or roll in coconut before putting it in the fridge
  • mix in a handful of raw cacao
